AGED GOUDA W. WAXED RIND
​PASTEURIZED COW'S MILK

Our flagship cheese that has been produced with our grassfed cow’s milk since 2010. Aged in our limestone caves, our award winning cow's milk cheese develops a sweet buttery characteristic reminiscent of a young Gouda, balanced out by a slight acidity with a lovely touch of herbaceousness.​

Seven Sisters but aged longer in our caves for at least 14 months.  This turns the young Gouda style cheese into a more mature cheese with deeper notes of fruit flavors with crunchy protein crystals.

St. malachi

Alpine/Aged Gouda w. natural rind
THERMIZED COW'S MILK

Our Alpine & aged Gouda inspired cheese with a favorable flavor profile made with our cow’s milk. The paste is smooth yet firm with flavors reminiscent of roasted nuts, dried fruits, bourbon, toffee, & buttered toast. Younger wheels have a smooth texture featuring nutty & buttery favors with caramel undertones.
named after St. Malachi church located off of Doe Run Road

St. Malachi but aged longer in our caves for at least 14 months. This turns into a mature cheese with a firmer paste that forms crystals that crunch in your mouth.

Appenzeller w. natural washed rind
​raw COW'S MILK

Throughout the year we collaborate with different producers to wash this alpine style cheese in locally made libations. For several months, these washes develop an aromatic smear rind before letting the natural flora take hold. The result is an experience of sweet toasted nuts, umami, & a little funk.
named after the beloved #thattree in chester county that was struck by lightning in 2015

This aged lactic has been made on our farm since 2014. Barrel shaped wheels contain a geotrichum rind with a lightly dusted maze of wrinkles. A cross section reveals a soft, outer cream layer which leads to a crumbly, tart core. Tasting notes feature green apple, yeast, & a hint of fruit blossoms.​

BLOOMY RIND INSPIRED BY italian robiola
​PASTEURIZED COW'S MILK

A cheese we have been producing for over 10 years! Featuring long oval wheels, these bloomies have an inviting fluffy white rind & a paste that ranges from springy to gooey depending on its maturity. Butter, crème fraiche, & mushrooms coat the tongue on younger batches while the more mature age brings out broccoli & cauliflower flavors at 7-10 weeks.​
Our farm is full of pollinator plants with nectar that often attract Hummingbirds
